Basically, most spam filters use Bayesian filtering to detect spam emails - In simple terms, a large database of terms and words commonly used in spam are gathered into a database. The spam software then compares the ratio of hits to the "normal" content of the email, and decides, based on that comparison, if the email is spam.
The random text is an attempt to skew the results of the comparison by including a greater number of what would be considered "normal" content, thus (allegedly) lowering the chances of the email being zapped as spam.
