Jul 08, 03 02:33 pm — Now that we are tucking into the summer months, there is more great fresh produce available at your local farmer's markets. In order to achieve my self-appointed duties here in Madville, I am posting some good, but easy recipes for y'all. Take advantage of this time of the season, forget the hothouse or imported crap, get some of the good, fresh locally grown stuff. It will make a difference...

Now is the time for cherries, snap peas, beets, broccoli, rhubarb, leafy greens, herbs, strawberries, and chard. Coming up very soon will be the sweet corn, cucumbers, chile and bell peppers, green beans, plums, peaches....well, lets not get ahead of ourselves now. Those of you in the warmer regions may already have some of these available to you.

I am also including some good Italian recipes as well, mainly so Newfie wil quit his damn whining....


ROASTED ZUCCHINI WITH LEMON
ORZO AND HERBED SUGAR SNAP PEAS
ROASTED BEET AND SUGAR SNAP PEA SALAD
CHERRY CLAFOUTIS
RHUBARB CRISP WITH BUTTERMILK ICE CREAM
SAUTEED SPINACH WITH GARLIC CHIPS
Pasta Salad with Arugula Pesto, Grilled Chicken Breasts, and Feta

...and for the Italian recipes:

Pizza Dough
SAUSAGE AND CHEESE MANICOTTI
FETTUCCINE ALFREDO
CAMPANELLE PASTA WITH PARSLEY BUTTER
Frittata
White Bean Tuna Salad
Shrimp Scampi
Sausage and Sweet Pepper Calzones

And the Cheese of The Day is:

Banon Chevre

here's a delicious recipe for corn salad. you barely cook the corn, so it's still really fresh and crunchy and sweet. it's really simple, too. i made it on the 4th for a BBQ at a friend's house and every last bit was eaten.

Need a hard cheese reccomendation. The wife is not allowed soft cheeses for a long while.

Ah, yes, them who be preggers are supposed to stay off the soft and unpastuerized cheese. If you can get it, a good borenkass (aged gouda), Vella Dry Jack, English cheddar (Keen's or Montgomery), Gruyere or Emmental for a swiss option, or even a simple parmesan (NOT the crappy canned stuff) or Grana Padano. Sheeps milk Manchego or Zamorano is great, but I think most of them are unpasteurized. Hell, even a good Tillamook cheddar, if available....

You might be able to find Cotija there in Mexico, it is called the "Mexican Parmesan".

Just be careful to read the ingredients. Some doctors say absolutely NO unpastuerized, while others say of it is a hard, aged cheese, it is no problem. Might want to ask yours to be sure....

She has been gagging on garlic recently. One of the greatest tradegies of my life. For a while vinegor was doing it too. Thankfully that is over.
